Meal Plan: Cheap, Healthy and Easy Ideas

When money is tight and you still need to feed your family, what is your go to for cheep but healthy meals? When I am in a jam, I tend to go for the easy like pancakes, but those are not exactly healthy. I have created a list of food that can help when things are tight or just trying to save on money in general as we all know the grocery bill can get a little high. This is also a great resource to freshen up that go-to list when creating a meal plan. Happy Eating!

  1. Easy Cheesy Lentil And Rice Casserole

  2. Potato Meatless Burger: Mashed potato into patties and mix beans and make meatless burgers

  3. Eggs and toast or Pancakes

  4. Hearty Two Bean And Lentil Chili

  5. Egg sandwiches

  6. Breakfast burritos with eggs, tots, cheese and vegetables

  7. Salad Bar for Dinner

  8. Baked Potato Bar

  9. Make the salmon and hash browns into croquets (Fried with a little flour and oil - add an egg if you have one!)

  10. French toast

  11. Easy Black beans and rice

  12. Easy Lentil Meatballs (Vegetarian, Gluten Free)

  13. Pasta with some Italian seasoning, add a can of diced tomato and small amount of shredded cheese. This can feed 8-10 people.

  14. Add milk to the eggs and some seasoning and scramble.

  15. Soup beans and fried potato

  16. Buttered pasta with any mixed vegetable you have

  17. Vegan Sloppy Joes


Meat can easily increase your spending as it is not cheap. But when you find a great deal, here are a few things you can make!

  1. Cream cheese chicken chili served over rice

  2. Chicken and Dumplings

  3. Slow Cooker Chicken Pot Pie Stew

  4. Crockpot Taco Soup Enchiladas

  5. Sour Cream Noodle Bake

  6. 30 min Homemade Chicken Noodle Soup

  7. Cheeseburger Rice

  8. Crockpot Mississippi Chicken

  9. Sautéed Chicken and Broccoli over noodles with mushroom soup for sauce

  10. Sour Cream Enchilada

  11. Philly Cheese Steak Sloppy Joe

  12. Chicken Bacon Ranch Baked Penne

  13. Italian Sausage with potato and carrot

Sear Italian Sausages in skillet; add chopped potato and carrot and a cup or two of water. Add seasoning for flavor. Cover and cook for 20 minutes or until potatoes are cooked.

14. Taco Bar Dinner with salad ingredients

15. Chicken and Rice Casserole: Boil Chicken and make chicken and rice. Add butter, a little cheese and cream of whatever you like soup.

16. Tater Tot Casserole

Version 2

Version 3 Ground beef, bag of tater tots (or two for that big family?), cream of mushroom soup, shredded cheese and I add Worcestershire sauce

Version 4 cream of mushroom mixed with ground beef and canned green beans with a bag of tots on top

17. Chicken Soup: cook a drum stick in water until fully cooked, add diced carrot with some pasta and boullion cube or two. Shred the meat on the drum stick to small pieces and mix with the pasta and water from the boiled chicken. Serve as soup.

19. Baked BBQ Chicken with Mac and Cheese

20. Shepherd Pie

21. Crockpot Salsa Chicken served with Rice

22. Bacon Cheeseburger roll-ups

23. Better than takeout chicken fried rice (less the meat and double the veggies)
